Vegan Recipes are everywhere these days, and if you are looking for a quick and delicious meal, look no further. This is one of my favorite dinner dishes, and my family loves it too. Whether you are all plant based, vegan or just one that wants to eat healthier, this dish is the perfect start. The one thing great about this recipe, is that you can swap out ingredients for others if you would like. I have been eating plant based for a while now, and I love how the nourishing food makes me feel. The great you thing about this delicious meal is that it only takes about 20 minutes to prepare. For all of you that are in a rush, this is the perfect fit for a delicious meal.
-1 head of organic cauliflower
-1 jar of primal kitchen buffalo sauce( super healthy with no sugar)
-1 can of chickpeas ( drained)
-1 small container of small cherry tomatoes
-2 organic avocados
-1 bowl of vegan cheese
-1 can of organic vegan Tzatziki sauce ( yum)!
Place your cauliflower on a baking tray. Cut and chop up into small pieces. Once you have it completely cut up, spread the buffalo sauce all over the cauliflower. Mix it up so that all the sauce is covering the cauliflower. Sprinkle a bit of pepper on top if you would like. Bake on 350 degrees for about 20 min. At the same time, place chickpeas on another sheet. Top a bit of olive oil and garlic on top. Spread so it all is covered. Stick the pan in oven, but if you don’t have double oven, you can wait. Once they both are done , set aside.
Cut the tomatoes in halves. Top with a bit of olive oil and basil. They are so good this way. If you would like, you can keep them bare. Cut and slice the avocado. Top with a bit of pepper. Once you have them cut, place the chickpeas an buffalo cauliflower in each bowl. Top with the tomatoes, avocados and cheese. You can top it with basil and Tzatziki sauce. This will be an unforgettable meal. Enjoy!
