Hiappy Wedneday. I wanted to share with you one of my favorite recipes that I love making on busy days. I have always been a fan of Ramen soup, but some can be filled with so much sodium that it can make you feel like crap. I love making this one at home because it’s not out of a bag, and I add my own little twist to it. This Ramen is one of my all time favorites.
First I always use the Lotus Foods Vegan Rice Ramen. This Ramen is organic, and vegan. It only contains oganic rice noodles. Many of the others includes the seasoning which is the bulk of the sodium This ramen uses a infused bamboo. It is loaded with potassium and iron and only a small 120 calories per serving. I feel Lotus foods makes the healthiest Ramen out there. I usually buy the plain noodles and add my own spices to them.
I start off by heating up about 3 cups of water in a pan. I make sure to add a pinch of himalayen salt to it to prevent dryness. I let that boil for about 7 min. I like the water to be extra hot. I place the Ramen noodles in there and bring them to a boil. I make sure to stir so that the noodles do not stick. We do not want that. I add about a tablespoon of vegan butter to the mix and stir well. I usually like to add in a pinch of garlic to the noodles. This will not make the noodles overbearing.I add just a bit of organic chicken stock to give it that savoring taste. Once the noodles are done, I rinse the water out, and add a bit more chicken stock to the noodles. I add in my fresh parsley, pepper, a bit more Himalayen salt and a bit of oregano. Talk about yummy. This is such a favorite of mine. The best thing to remember is there are always healthy alternatives to cooking . I hope you love this as much as I do.
INGREDIENTS
1 package of Lotus Foods plain bamboo noodles
1 tablespoon of organic vegan butter
1 tablespoon Himalayen Sea Salt
1 tablespoon Black pepper
1 tablespoon fresh parsley
1 tablespoon fresh oregano
11/2 cups of organic chicken stock. ( Low sodium)
