My Favorite Matcha Oat Pancakes

I wanted to share with you one of my all time favorite recipes that I absolutely love. When you think of the word pancakes, I’m sure you think unhealthy, fattening and filling. Well not these! Thats the good news. These pancakes are super healthy, full of antioxidants, and will give you the energy to start your day. This is a great little meal to break your fast if you intermittent fast in the morning. The best part also is that they only take 15 minutes to make. They are low-calorie, and nutritious packed with plant based proteins.

Ingredients Used:

-Rolled oats ( organic)

-Almond Milk (unsweetened)

-Spinach

-Pure Maple Syrup

-Pure Matcha Powder ( I Love Shayna Taylor’s Matcha)

-Hemp or Chia Seeds

-1 Egg ) free range and organic

-baking powder

-Vanilla Extract

-pinch of himalayan salt

-Extra Virgin Olive Oil ( organic)

Start by getting your blender out and throw all the ingredients in there. I usually use 2 cups oats, and for the rest, I use how thick I want the consistency. The olive oil for me is usally around 2 tbsp. Make sure you get all the ingredients blended. I only use about 1tbsp of matcha. Once you get everything blended, taste the batter to make sure it’s not too strong for you. Let the batter sit for a few minutes. While the batter is sitting, heat the pancake pan with medium heat with a bit of coconut oil spray. Cook 1-2 minutes until the pancakes are slightly brown .Repeat the process depending on how many pancakes you want. I love to top mine with bananas and seeds.
